Amedei Trinidad

I picked up this little Amedei at the Chocolate Show in NYC and set it aside for a moment when I wanted some really decent chocolate.  I was setting myself up for disappointment.  I’m very fond of some of Amedei’s bars, but this Trinidad (70%) tastes like it was made from a barnyard animal.

The smell is nice, and even the first taste is a strong, dry cocoa flavor.  Then the chocolate melts into a musty leather.  Really: it’s exactly the same as the smell of an old leather satchel that I grew up with.  I may be off the mark, but the character of the chocolate is what I associate with lower grade beans (forastero).  At any rate, the beans seem to have gotten a good dark roast.  Throughout the rise and fall of the leathery taste, there is a consistent base note of roasted cacao, approaching bitterness but never getting there.  The chocolate finishes with a hint of this taste and prolonged astringency.

Luckily, inside the package are four little squares of the Trinidad, so after you eat one you can dispose of the other three conveniently.

    Well, Trinidad is definitely not Amedei’s best, but it retains the natural flavors of its origin!
