About the Blogger
Brendan Gannon has been fortunate enough to work for three chocolate companies, one of which was his own brainchild. He has extensive experience in chocolate, particularly in artisanal confectionery. He’s done bean-to-bar processing and immersed himself in food science, studied marketing and analyzed endless press releases; he has lain awake at night, mind racing under the influence of theobromine. He has imparted chocolate technique to good-natured interns and led tasting events of all shapes and sizes. Lately, he eats chocolate, writes about it, and does a spot of consulting.
